Mara’s place in the Reed & Ember story is the short journey from a pot to the pass. She thinks about how a complete serving will be eaten, rather than judging only its most concentrated spoonful. Rice, a warm main and a crisp companion give a diner several ways through the same plate.

Her shared notebook with Jun began in 2016. Notes about flavour sat beside notes about utensils, temperature and portions. The room on Lantern Walk followed in 2018, then the shorter lunch rhythm and the later private-dining plan.
