The quick pickle’s sharp edge
Different cuts let three vegetables stay different.

The quick pickles use an unsulphited rice vinegar in their listed recipe. Cucumber, carrot and radish meet the same small group of dressing ingredients, but their cuts preserve different textures. A thin cucumber slice bends, carrot keeps a firmer bite and radish carries a peppery edge. The aim at the table is contrast rather than a large, uniformly sour portion.
Lunch uses cucumber alone as a side and beside the miso aubergine plate. Dinner offers all three vegetables together so a shared table can take a small sharp bite between richer dishes. A warm braise and a cool pickle have different jobs. They do not need to be mixed together at the start for the relationship to work.
Other dishes use wine vinegar, which has its own sulphites declaration. A diner should therefore read the exact dressing in the relevant entry rather than assume that every pickle or salad contains the same vinegar. These stories describe the intended meal, not preservation or storage instructions. The useful detail here is how a small, crisp companion changes the pace of a warm main.
