Four dishes, a closer look

Texture, portion and the things alongside.

These four studies follow a small group of dishes through lunch, dinner and dessert. They leave the complete menus intact: a longer story is available when a preparation catches your interest, while a price and portion remain easy to find at the table.

A shared ingredient does not make two servings identical. Aubergine has a lunch pickle, trout can carry oil or butter, and roasted tea becomes a drink or a custard. Each study points to the exact choices it describes so the useful differences remain visible.
