Kombu in a clear bowl

Kombu gives the clear dinner broth a gentle savour beneath turnip and spring onion. The turnip keeps its own sweetness, and the fresh onion arrives as a separate note rather than disappearing into a heavy base. A small bowl can warm the beginning of a meal without using the same richness as the main that follows.
The mushroom-and-miso broth is related but fuller in character. Shiitake brings another depth and miso adds its declared soybean ingredient. The lunch carrot broth takes a different route through roasted carrot, ginger and a celery-containing vegetable stock. Kombu appears in both clear and more layered preparations without making their complete ingredients identical.
