The aubergine comes before the glaze

A soft centre and a thin miso surface do different work on the same plate.

· Mara Vale

The first thing to decide about our aubergine plate is not the sauce. It is the point at which the flesh becomes soft enough to eat with the edge of a spoon. If the glaze arrives too early, its colour can suggest that the vegetable is ready while the middle still resists. Mara’s menu notes therefore describe two separate stages: develop the aubergine itself, then give its surface a short, deliberate finish.

The listed glaze uses rice-and-soybean miso. That matters both to flavour and to the ingredient declaration: miso is not an anonymous savoury paste that can disappear from an allergen list. Sesame adds another declared ingredient. In the lunch plate, the cucumber alongside is dressed with rice vinegar, sugar and salt; it is intended to be sharp and cool, not a second rich component. Plain rice provides a warm place for the small amount of glaze that leaves the vegetable.

Lunch and dinner give the composition different portions. The midday plate is a complete meal, with a cool cucumber pickle already alongside the rice. Dinner presents the whole aubergine as a main with rice, leaving room to choose a separate companion for the table. The roasted radish is a gentle beginning; the three quick pickles add a sharper contrast. Neither is necessary to make the main complete, so the choice can follow the appetite of the people eating.

There is pleasure in deciding how to take the next bite. A spoonful of soft aubergine can meet plain rice first, then a piece of cucumber, rather than being mixed into one uniform bowl. The dish is vegan as written and contains soy and sesame. That recipe information helps explain the composition, while the shared-kitchen note remains relevant to anyone considering an allergy. For a longer evening, follow the warm plate with tart roasted plum over coconut rice.
