
An autumn table in three movements
Planning the coming autumn: warm vegetables, slower pots and a tart ending.
The autumn table plan moves from warmth to depth, then leaves a little tartness for the end. Its first movement is a mushroom broth or roasted radish, chosen according to the rest of the meal. Starting with several rich plates would leave the slow pot with less room to do its work. A seasonal sequence is most useful when each part gives the next one a reason to arrive, rather than asking every dish to carry the whole idea of autumn.
For the middle of the table, squash with white beans provides one route and braised short rib another. They are separate choices with separate portions and ingredients. The squash main uses rosemary and lemon oil; the short rib arrives with mustard and a reduced celery-containing stock. One is not a miniature substitute for the other. Each can be the centre of a complete meal, with a companion chosen for texture rather than simply to fill the space around it.
A bright companion is particularly useful here. Three quick pickles or cabbage with pear and sesame bring a different temperature and bite beside a soft main. That contrast is a reason to choose them, not a claim that they cancel the richness of another dish. Drinks can follow the same practical logic: a tart alcohol-free infusion, a pot of roasted tea or a bottle from the illustrative cellar, all with their own measures.
For dessert, coconut rice with roasted plum keeps the fruit’s sharpness, while warm pear with chocolate offers a fuller ending. A table can choose differently without losing the season’s overall rhythm. The same is true of drinks: roasted tea, a tart hibiscus infusion and a fuller bottle from the cellar can each find a place beside the food. The important question is what the diner wants next, after the plates already eaten, rather than which combination sounds most impressive on paper.
This autumn selection uses the ordinary dinner service rather than adding a separate event with its own hours. That keeps a proposed visit straightforward: choose the date, consider the group, then allow enough time for the meal.
